Filipino Beef Stew “Caldereta”

Caldereta is a flavorful Filipino stew typically made with tender meat, vegetables, and a rich tomato-based sauce. It’s a hearty and comforting dish that is often served during special occasions and gatherings.

Here’s a basic recipe for making Beef Caldereta

INGREDIENTS:

  • 2 lbs. beef, cut into chunks (you can use beef stew meat)
  • 2 tablespoons cooking oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 medium potatoes, peeled and cubed
  • 2 medium carrots, peeled and sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup green peas (frozen or fresh)
  • 1 cup tomato sauce
  • 1 cup liver spread (or liver pâté)
  • 2 cups beef broth
  • 1 teaspoon paprika
  • 1 tsp sugar
  • 1 teaspoon chili powder (adjust according to your spice preference)
  • 1 bay leaf
  • Salt, soy sauce and pepper to taste

INSTRUCTIONS:

  1. Heat the cooking oil in a large pot over medium heat. Sauté the onions until translucent, then add the minced garlic until cooked.
  2. Add the sugar to the pot. Add the beef chunks and cook until they’re browned on all sides. The sugar gives a perfect reddish brown color on the meat. Browning helps seal in the flavor.
  3. Pour in the tomato sauce and beef broth. Add the paprika, chili powder, and bay leaf. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer until the meat is tender. This can take about 1.5 to 2 hours, depending on the meat used.
  4. Once the meat is tender, add the liver spread (or liver pâté). Stir until the liver spread is fully incorporated into the sauce.
  5. Add the potatoes and carrots to the pot. Simmer until the vegetables are tender.
  6. Add the sliced bell peppers and green peas. Let the stew simmer for a few more minutes until all the flavors meld together.
  7. Season the Caldereta with salt, soy sauce, and pepper to taste. Adjust the seasoning according to your preference.
  8. Once everything is cooked and the flavors have melded together, serve the Caldereta hot over steamed rice.

NOTE:
